This is a great book for those of us who are gluten-free, whether through necessity or desire. I have struggled with trying to make GF cakes for years that not only taste good, but have a decent texture. I can’t wait to test a bunch of these to see.The author starts out with information on what gluten is and why it works in baking goods, then how you work around it with other ingredients. I’ve been GF for years and baking for nearly as long—and I learned some things here that I didn’t know. She also includes things you will need in your GF kitchen.There are recipes for quick cakes for snacking, layered cakes, as well as cupcakes. So you have a bunch of options.I received this book as a review ebook, but I have already put it on my “buy this” list for when it comes out.
