Dr. Libby's Real Food Chef

I was looking for a way to get more fruit and veg into my diet in an interesting way. Easy recipes (although from Southern Hemisphere so uses a lot of fresh coconut) with notes on the nutritional value. Also Dr Libby understands the need for a sweet snack but gives you nutritional alternatives to what you might usually reach for. It has completely changed the way I eat and I feel better for it.

I've really enjoyed trying some of these recipes, it's also good to know all the nutritional benefits that Dr Libby writes at the bottom of each page. I do wonder though whether the oven settings should be for a fan oven, as the Nut Butter Muffins were a bit of a flop - they needed a hotter oven to rise and brown. The Simple Chocolate Truffles are thoroughly delicious although I do add some maple syrup to sweeten them!
