I love this authors Indian instant pot cookbook and since I follow a keto diet I was super excited to pre-order this cookbook. Sadly, I’m returning it. It does not follow the keto guidelines and the net carb counts are extremely high on many of the dishes. Sad to say, this won’t work for my needs.

This cookbook literally has something for everyone! As you can see by the photos I am including -- none of this looks (or tastes!) like "diet food". So forget that this book's says "keto" on the cover. It is simply a cookbook of easy, amazingly yummy food -- from a variety of regions -- created by a reliable recipe author. If you're not keto, just add a starch and/or use regular sugar and you'll be all set.For the physical cookbook, it is a sturdy paperback, with pages of a good nice thickness making them very easy to turn.The recipes are well laid-out, clear and easy to read. The super-helpful sidebar gives you both the macro details, as well as the recipe's relevant classifications: Dairy-Free, Gluten-Free, Pour and Cook, Soy-Free, Vegan, Vegetarian, 5 Ingredients or Less, Under 45 Minutes. (I'll include lists below of everything in each category.)Of the 75 total recipes, 36 of them (nearly half!) are flagged as "Under 45 Minutes". And the "Total Time" listed is actually the REAL total time, helpfully accounting for the time needed to both come-to-pressure and to release-pressure. So even if you're slow in the "prep" step like I am, you'll still be able to sit down and eat within an hour for nearly half of the recipes in this cookbook. Title should be: Indian kinda-Keto Instant Pot recipes.
Nothing in the description stated it was primarily Indian recipes. Those simply won't work for my family; I cook for multiple family members who have IBS.The remaining sound good, but only if I overlook that they aren't true Keto. Complete waste, returning ASAP.

The Best Keto Instant Pot Cookbook Out There.
OK. You’ve got your Instant Pot. Now what? The instrument panel can be somewhat intimidating, and you haven’t gone near a pressure cooker in this entire century. What to do?Enter Urvashi Pitre. Not only does she understand the Ketogenic diet, but she also knows how to translate the Instant Pot instructions into easy-to-understand recipes that will save you time, and keep you on track to stay Keto. She is a low carber herself, so you won’t find faux low carb recipes in this book.But none of that matters if the recipes don’t translate into delicious, satisfying meals. That she accomplishes in spades.Frankly, I was afraid to go near my new Instant Pot Ultra. I didn’t know what to cook, how to cook it, or even how to set the thing. Urvashi walked me through beef stroganoff, which was delicious, and then I tried her beef curry. Despite using a rather tough (and inexpensive) cut of meat, the beef was tender, and the flavor of the spices was sublime. Yesterday I made my very first corned beef and cabbage in the Instant Pot, and it was delicious. My husband said it was the best he ever had.If all the Keto Instant Pot cookbooks out there, this is by far the best.

Beware, many recipes are not keto
My main complaint about this book is the author's liberal use of high carb ingredients, like raisins, Korean gochujang and corn tortillas, as well as higher carb veggies such as carrots, leeks, onions and turnip. The average store bought gochujang has 10-14 grams of carbs per tablespoon!! I am very suspicious of the nutrition facts listed on the recipes for this reason. The recipes may be lower carb than normal ones, but a keto diet is generally 20 carbs a day or less. I'm fairly knowledgeable about the keto diet so I can tweak where necessary, but I would not recommend this book to a keto beginner. There are many great ones out there, sadly this one wasn't worth my money.

What are you waiting for......Just cook it!
New to Keto and just the intro alone will give you a broad idea about the diet/way of eating. I have been poring over the book, will be cooking some dishes this weekend, can’t wait. This is not your simple American dump recipes. But they aren’t hard either! Very tasty. I see there are a few key ingredients and some unique ingredients. But hey I think we can all agree “diets” can be boring. This doesn’t even remind me of my goal to lose weight. I have cooked previous recipes of hers. Easy, simple and delish. You have nothing to lose and happy tastebuds to gain!

Thanks for the great recipes Urvashi!
I ordered the hard copy which is due out later this month and then learned that I could get the digital copy early at a discount. It arrived yesterday and I already made one of the recipes. Urvashi's recipes are almost fool-proof if you follow the directions correctly and this is coming from someone who is not a "cook" in the traditional sense of the word. This is my second cook-book by Urvashi (plus I've tried recipes from her Twosleevers.com website) and so far, everyone has been a home run. I can't wait for the hard copy to come out also! Thanks for the great recipes Urvashi, and the clear directions for those of us who don't yet cook intuitively! You definitely have a fan. The great thing about this book is the recipes don't taste "low carb" and are not just for those following a Ketogenic diet, so my "non-keto" husband has been equally pleased.

Multicultural food, American ingredients
I was so excited to find this book as I've been wanting to go keto again after "falling off the wagon" for some years. This is a good cookbook with lots of recipes I would be very interested in trying. However, it's super disappointing when many recipes (including as the keto cheesecake, which I was so excited to contemplate!) contain ingredients that simply aren't available in the UK or EU unless you can afford international shipping of ingredients, and no possible alternatives are provided by the author. The sweetener for the cheesecake is one example and "Ro-tel tomatoes with chilis" is another, listed by the author at the start of the book as a staple (having lived in America for some years I am familiar with this product but cannot find an adequate substitute on this side of the Pond). There are several other examples which I won't list one by one. I'll research to see if I can somehow convert these recipes so I can actually use them, but it's disappointing to pay for a cookbook and then discover that you still have to do the legwork yourself because the author- who is not even American born!- has forgotten that America is not the only country with people who want to eat keto.

Hardly any images :( quite poor
Was excited for this book but when it arrived of all the recipes inside I think about 10 or 12 had images to go with them, and just endless pages of blank space inside.Quite poor will return.

Great for any pressure cooker user
Excellent book with great, easy to follow recipes. Don’t be put off by it being a Keto book; I’m not on a Keto diet but there are so many recipes I will be trying. Gave it 4 stars because I would prefer photos and also it does have ingredients which I would struggle to get in the UK. However, there is really useful information about using an electric pressure cooker and some spice mix recipes I can’t wait to try

Another great IP book from Urvashi Pitre
Easy to follow recipes with no fuss that the whole family will enjoy. A few more photos would have been welcome in the kindle edition as I like to see the finished product and therefore only four stars.
