Should the straining process occur in the refrigerator?

Not necessarily. When my yogurt is ready I dump it into a cheese cloth lined strainer over a bowl and let it sit on the counter for approximately 1 hour, then place in the refrigerator

I received the strainer as a gift. Wish it had a 2nd container with it. Any idea where I can get a 2nd container?

The only thing I received with mine is the heating element, a pot to mix the ingredients M And a lid. I bought a mesh bag and put that. In a colunder to drain. You can get a colunder at Walmart. Hope this helps
