We plant our olive trees in a harsh rocky desert in the foothills of the snow covered Atlas Mountains. The significant temperature variations during the day and night (124 F in summer with extremely cold nights), the rocky soil and scarcity of water stresses the olive trees, which causes them to produce high levels of antioxidants, including hydroxytyrosol (which is only found in nature in olive oil and olive leaf and contributes to olive oil’s healthy reputation).Irrigated by the waters coming from the Atlas Mountains, constitutes a real oasis where a high quality, delicate and aromatic olive oil is produced. PASSION FOR AGRICULTUREA passion and devotion to agriculture for more than a century defines the tradition of the Aqallal Family. They are known for their engagement with the local community in providing employment and following an ancient olive growing tradition. Constant monitoring of the cultivations and picking at optimal ripeness with only a 20 minute interval between harvest and grinding creates the highest quality product.
