Will these stick to a stainless steel frig

Magnets will stick to "SOME" stainless. important you TEST FIRST with another magnet. Commercial stainless may be non magnetic, it depends on the amount of chrome nickel and other metals in the alloy.

Would these work to make a door sign on a car?

No these are not weather proof and probably too thin. You need at lease 30 mil thick for a car sign.

Can these be laminated?

These are so thin, I don't know if the magnet would stick with a layer of lamination behind it. I can't say for sure.
