does this provide UV protection

Not to my knowledge it doesn't provide any protection.

Does this item unfold to a square?

No it's not square, it's a triangle. When it's dry it's a little stiff but after you soak it or get it wet it's soft. I'll see if I can upload a pic.

I'd like clarification please - this listing is for both items, the triangle hat plus the cooling towel?

I only received the hat. Perhaps they are referring to the fact that one of the towels is sewn in to it so it can be used in different ways.

Will it fit a 7 3/4” head?

I believe it will fit a 7 3/4. My head is about 7 1/8 and there is a lot of room left for a larger head. I would recommend this head cover. I have a two of these, used several times a week, and they have lasted for a couple of years now, and still going strong.
