Awesome Container for foods and fermentation.
First thing I love about this container is no smell as some don't care for the smell of kimchi in the fridge. I made kimchi and it turned out perfect and it keeps extremely well. If it's your first time making kimchi I recommend reading a book on the subject which is easily found on kindle. I would recommend using premium fish sauce and salt as it makes the best kimchi. If price is a concern I recommend the Mother in laws D.I.Y. kimchi kit. It around $21 and easier financially to fit within most budgets. It comes with enough really, really, really good fish sauce and chilli's. I recommend finding the darker traditional chilli used in kimchi as opposed to the brightly colored ones even though they work excellent and are fairly close in price($2.95 difference). I personally love this container I also got the smaller 2 quart size. I personally feel the 1.6 gallon works best for long term usage as the smaller one has the lid locking clips as a one piece design on the lid that after a while the plastic can fatigue and they may eventually break. Personal I'm am buying at least 1-2 in the 1.6 gallon size and a 5 gallon. That way I can have one for kimchi, pickles and one for foods that just need a good air tight seal. Excellent product and highly recommended as I do a lot of gourmet and traditional type cooking and this is just an awesome product. Depending on your fridge size I personal would buy the 1.6 gallon and the .5 gallon so you can have a small one for lunch or to share with family or friends. This product is very well made and packaged very clean, my only regret is limited fridge size but depending on your local weather can keep very nicely in the garage in cooler times of year to slow ferment kimchi as well.

Good Quality, No Fishy Smells
I’m Korean with a non Korean partner, and I recognize that making your own kimchi comes with several nuanced aromas that others might not appreciate as much as I do. I bought this to help contain those smells.First off I bought the 1.6 gallon container. I’d say it’s comfortably hold 4 Napa cabbage heads inside, which is a lot of kimchi. Secondly, the construction quality is very good. Everything fit very snugly together to make an air tight seal. Third, while fermenting in the fridge, I detected none of the usual garlic odors in the fridge while I let it slow ferment. I cannot speak to if this container produced a better finished kimchi than other containers, but the kimchi came out excellent, and all the other inhabitants in my fridge thank me for buying this container.

Making fermentation super easy
This gallon fermentation box is constantly in use in our kitchen... sauerkraut, kimchee, pickles ... they all come out great in this container. The inner lid keeps the veggies submerged perfectly. The construction is rock solid (super high grade quality thick serviceable plastic). Very easy to wash and ready for another load. We're loving this thing. So much easier the filling individual mason jars and managing the "burping" of CO2 ... this whole container is large enough to do a significant batch size and all the CO2 simply rises up inside - popping open the lid each day lets it escape, which is when I use a litmus paper test to see how acidic those delicious veggies have gotten. Highly recommended for the serious home veggie ferment'ers out there.

I'm amazed at how compact it is and how easy it ...
First batch of kraut is pickling away, I'll update a few weeks from now, when it's done. I have the 1.6g size, 3 full heads of (western) cabbage with room to spare.Compared to the old crock and plate method: no comparison -- no skimming, no daily attention (but I can also say that about a real fermentation crock with a water seal rim/lid).Compared to a fermentation crock with weight and a water seal rim/lid that's about the same volume: I'm amazed at how compact it is and how easy it is to move around (handle on top that doesn't show well in the pix). The whole thing, including cabbage, is around 10 lbs because the unit itself is so light. And, as others have pointed out, I don't have to worry about the cabbage smell in my kitchen or wherever else it ends up. Also, it's about a fifth the price of a good quality fermenting crock with a weight and a water seal rim/lid.I do worry that the gasket/inner lid component might give way after some amount of use, but no one has mentioned that. I guess I'll cross that bridge when I come to it (and maybe the inner lid will become available as a replacement part).

Great for kimchi/kraut. Mediocre for brine fermentations
Sturdy product that is easy to clean. Fermentation smells are not eliminated but are pretty well contained.Great for kimchi/kraut, but has a few logistical issues for brine based fermentations. The adjustable lid does not work as well as I had hoped. I’ve experienced a significant amount of Kahm yeast even when removing all air from fermentation chamber. The lid also rises unevenly and has fallen back into the ferment when airlock is closed.

The Best Ferment Container On Market
This container is a must for your fermentation frenzy to begin. Makes it so easy and is just plain genius. I cannot say enough things about these containers, I bought 2. They do what they say they do, easy to clean, contains smell, and the plunger top piece works (no spills) and fits in fridge, which is great for those larger batches of kimchi. Makes fabulous tasting kimchi, made my fermenting fret free, highly recommend.

Top but beware of the actual useful capacty.
Bought the 2.2 gal model. Not yet tested yet : until now I had a stainless steel box from Korea with about the same capacity and made numerous batches of nappa kimchi, but because of tensions in the box it started to crack and is not air- nor liquid-tight anaymore, but this model now was quite appealing and promising, so my next review will deal with the actual making of kimchi in it. I appreciate the inner vacuum lid with the silicon seals, and the air tightness of the whole box. Beware though of the capacity : it is stated as 2.2 gal. but the effective useful capacity with the inner lid in place turns out to be only 1.85 gal. This unfortunately turn out to be slightly less than my actual box, when I had thought I would end up with a somewaht larger capacity. Too bad!

Pour le kimchi ou la choucroute, par exemple.Fonctionne bien.Pas de mauvaise odeur.Pas de pourriture.Bon résultat.

Best Sauerkraut i have made to date
Ok so firsly i purchased this for Sauerkraut but it has many uses from keeping dry foods airtight.Fermented foods is where it shines.I was going to purchase a traditional crock pot but figured this would be easier to maintain and less heavy to store.When using this for Kimchi you need to plug the little hole in the inner lid that you oish down.This is due to anerobic conditions in which it ferments.But for Kraut you want that c02 to escape so i tend to push the inner plate all the way down and place the plug in till i remains kn place.Then i gently ease the rubbee stopper out which allows the c02 to escape.The outer lid is exellent meaning i dont worry about smells when fermententing or outside contamination.I have to say this helf 2 large cabbages ans could still have took more.Its a great size for this.And the Kraut is the best i have produces since i began.I think it allows for less monitoring due to the design and its very well made.I will be buying more for other uses very soon.What a great product.

Best fermentation product I 've used
This is the second one I 've purchased . I own 2 different sizes and I couldn t recommend them enough . Very easy to clean . No smell escapes which is perfect for the fridge .And everything you need to make kimchi. It s perfect . Will be investing in another soon for my other fermenting projects .
